    I never thought I’d write to recommend a frozen
    vegetable, but modern technology has it that
    today some are better consumed flash frozen
    
—like spinach.  Here’s a few reasons why you should
    head for the freezer aisle the next time you crave this
    vitamin-rich superfood. Relative to fresh spinach, flash frozen is:

  • Higher in vitamins, according to the American Dietetic Association
  • Significantly smaller in volume (i.e. because fresh spinach has a high water content, 1 lb. of fresh spinach equates to just 5 oz. of frozen spinach). This means that when you add a handful of frozen spinach to a recipe, it’s like adding the nutritional equivalent of a huge bowl of fresh spinach
  • Inexpensive
  • Long-lasting
  • Already washed & prepared

Frozen Entrees - Southwest Style Chicken  {Kashi}I know that cooking fresh is the best, but if I do reach for a something frozen these Kashi meals are great (and it feels like I’m going out!). They’re high protein, high fiber, low calorie and delicious. The only thing you have to watch for is the sodium.
